A few years ago I saw my aunt making the mango salsa we'd occasionally have at family celebrations and asked her for the recipe. Mine is slightly modified from that, but all the ingredients are the same. It's sweet, it's got a kick, and it's so refreshing!
Pairs well with: chips, spicy tacos, and grilled seafood
NOTE: If you're in a rush or want to save at least 15 minutes of prep - you can buy the precut mango spears/chunks from the market and just chop into smaller pieces.
MANGO SALSA RECIPE
INGREDIENTS
2 ripe mangos diced
2 roma tomatoes diced (insides removed)
1/2 red onion diced
2-3 stalks of scallions (green onion) diced
1 tsp garlic powder
1 jalapeno diced very small (I remove seeds but you can leave them in if you like heat)
1 tbsp red wine vinegar
1 tbsp of olive oil
handful of chopped cilantro
salt and pepper to your liking
DIRECTIONS
1. Mix all ingredients in a bowl. Taste and add more ingredients if necessary (not sweet enough: add more mango, not spicy enough: add more jalapeno...etc)
