Easy Mashed Sweet Potatoes

Ok before I share this recipe, I just have to point out that some of you might call these mashed yams, but they are mashed sweet potatoes in my book!


SPs are a STAPLE in our home. There are so many ways to enjoy them, but here I share an easy mashed sweet potato recipe with only 3 ingredients (plus some salt for seasoning!).




Mashed Sweet Potatoes

yield: 3-4 servings


INGREDIENTS

3-4 sweet potatoes peeled and cut into 1 inch chunks (no skin)

3 tbsp unsalted butter (or vegan butter)

1 tbsp olive oil

salt or sea salt


DIRECTIONS

  1. Place cut sweet potatoes in a large pot with just enough cold water to cover. Boil until tender (15-25 minutes). Potatoes are tender when you can pierce the potatoes with a fork without too much effort.

  2. Drain and place in a food processor or blender with butter, oil, and desired amount of salt. (TIP: add 1 tbsp of butter at a time and taste as you go. You may want less, you may want more.)

  3. Pulse potatoes until well blended to your liking (I leave mine a little chunky)
