When Mason and I were on our honeymoon in Tulum we stayed at a place that had an amazing Italian restaurant. One of our favorite things to eat while staying there was their Tiramisu.
This recipe is something I came up with that is most likely not authentic in any shape or form...but it's fast, no bake, and delicious!

TIRAMISU
INGREDIENTS
1 pkg ladyfingers
1 1/2 cups heavy whipping cream
1 tub mascarpone
3 tbsp powdered sugar
1 bar semi-sweet chocolate
1 cup boiling water
1 tbsp instant espresso coffee
1 tbsp rum liquor
DIRECTIONS
Line a springform pan with parchment paper OR make it inside of a glass dish (if using a glass dish, you will serve from the glass dish)
Add row of lady fingers to the bottom of the pan
Create your coffee liquor mixture by adding the instant espresso coffee to the cup of boiling water and mix. Once warm add the rum liquor.
Using a brush, add the coffee liquor mixture to the ladyfingers. Brush on 2-4 coats. You want them to be moist but not soggy.
Add a chocolate layer to the lady fingers by rough-chopping up (or grating) a semisweet chocolate bar. Reserve some for the topping. TIP: Put bar in the fridge prior to chopping/grating
In a medium bowl using a hand mixer (or stand mixer), add the heavy whipping cream and blend until the liquid becomes stiff whipped cream (not falling off the whisks).
Fold in your powdered sugar and mascarpone to the whipped cream. Add on top of the chocolate layer spreading to all edges of pan.
Sprinkle reserved chopped chocolate to the top.
Chill for 1 hour then remove from spring form pan and enjoy!
